Simple Salmon Salad
Broil two salmon steaks; when done break the fish into
flakes and add to it a little salt, pepper, and two tablespoonfuls of
lemon juice. Let stand for an hour. Half fill a salad-bowl with lettuce;
add the fish, and garnish with hard-boiled eggs and sliced olives.
Quick Salmon Salad
Finely chop three stalks of celery, toss into a salad-bowl, add
1 pound of canned salmon; add mayonnaise; garnish with extras
if desired. Serve on small crackers, toast or as is on small plate.
