Her Own Broccoli Salad

Broccoli salad is a very versatile dish that can be made in an endless variety of ways. Here is a breakdown of the most popular ingredients and dressings.

Ingredients:

2 Heads of fresh broccoli. Chop the stem off and cut the flowerettes into bite sized pieces.

Chopped vegetables. Some  favorites are onion, celery, carrots and cauliflower. Just add as much as you like until it looks like a good mix.

Cheese. Choose your favorite kind of cheese. It can be cubed, crumbled, shredded, or creamed as part of a dressing.

Extras (optional):

Bacon ~  Fry up 6-8 strips until crispy, drain grease and set aside. Crumble bacon after it’s cooled and add to salad just before serving.

Fruit ~  Raisins are the most common.  Some other popular choices are grapes, cranberries, chopped apple, mandarin orange pieces, or any dried fruit.

Sunflower Seeds or Nuts ~  Nuts give the salad a little extra crunch. Almonds, walnuts, cashews and hazelnuts are good examples. Try not to chop the nuts too small. Keeping the pieces larger helps the flavor of the nut stand out a little. Toasting the nuts with a little seasoning is an option as well.

Tip: If you would rather not chop up any fruit or nuts just add some trail mix to the salad instead.

Dressings:

a. Standard dressing for this salad is a basic mayonnaise/vinegar/sugar mix:

1 cup mayonnaise
1/4 cup vinegar
1/4 cup sugar

* Mayonnaise can be mixed with yogurt to lighten it up.
* Flavored vinegar can be used or substituted with lemon or lime juice.
* Artificial sweetener can be used instead of sugar.

b. Oil/vinegar dressing can also be used:

1/2 cup salad oil
1/4 cup vinegar
1/4 cup sugar(optional)
1/2 tsp. salt

* Flavored cider or wine vinegar is recommended.
* Spices such as celery seed, onion powder, basil, and oregano can be added.

c. Your favorite bottled dressing can be used as well. Any creamy or italian style dressing will work fine on a broccoli salad . A good one to try is 3-cheese ranch.

More Extras for more flavor:

Here’s a few various items that could be added to make your salad something original:

* Any canned vegetable such as peas, corn or beans(black, kidney, garbanzo, waxed, etc.).
* Fresh vegetables such as mushrooms, chives, bean sprouts, green beans, cucumber and bell peppers.
* Seafood can make it interesting: shrimp, scallops, salmon, and calamari are good additions.

Basic Instructions for Serving:

* Add broccoli flowerettes and any other ingredients you are using to your salad bowl. If you are using crumbled bacon or bacon bits add them just before serving.
* Add your dressing, mix and refrigerate 2-4 hours or overnight.
* Stir salad again before serving.

1.  Make an itemized list of all your expenses for the month and then decide where you can cut costs.

2.  Keep a weekly tally on all your expenditures.  Go through your receipts and find where the little pocket change is vanishing.  Those little extras really add up.  Try to eliminate them.

3.  Keep your trips to the store at a minimum.  On average each trip will mean that you will pick up a few extra unplanned purchases.  Try to plan your weekly shopping with a written list of all your necessities.

4.  Shop quickly without much browsing and make sure you’re not hungry before you enter the store.   Snacks are costly and when you’re hungry, you can easily toss in several extra purchases that would have been avoided if you had only eaten before you went in to the store.

5.  Be patient.  If there’s something you really want but don’t really need right away, watch for sales.  Try to avoid buying things at full price.  With food, learn to stock up on essentials when there’s a good sale.

6.  Stay organized at home.  When you can’t find something that you really need at the last minute, you may end up running to the store and purchasing another one.  Organizing your stuff really can save cash!

7.  Do it yourself.  Stretch your knowledge and learn to do more things yourself.  The local library and the internet has an unlimited resource of knowledge.  You can learn to do about anything you want to accomplish and save tons of money doing it yourself.

  • Add 2 measured tablespoons of milk, (not skim or 2%) and 1 complete egg.
  • Mix them together until they are well blended and frothy.
  • Next find a comfortable place to lie down and apply it softly to your face.
  • Relax for about 5 minutes then return to the bathroom and wash your face with lukewarm water.

NOTE: You may feel your skin is to dry after this facial treatment. If you do, it’s okay to use an all natural skin moisturizer, but make sure it has no perfume in it.

Ingredients:

  • Oat Meal – 2 tablespoons (not cooked)
  • Lemon Juice – 1 tablespoon
  • Pinch of chopped parsley
  • Yogurt – 4 tablespoons
  • Olive Oil – 1 teaspoon

Instructions: Mix ingredients together, making sure they are well blended. Then apply the mixture to your face and allow five minutes to work its magic. Rinse with lukewarm (not hot) water and you are going to think your face has been born a new.

Avoid cream based dressings and choose the vinegar based ones. You also have the option of using vinegar and olive oil which is heart healthy.

3.  Don’t Order Appetizers – Many appetizers have more calories and fat than the main course.

4.  Choose Healthy Foods Cooked in a Lowfat Manner – Go for broiled and grilled rather than fried.  Consider asking for a double order of vegetables with your entree.  Also, stick to tomato based sauces rather than cream based and you’ll enjoy a considerable calorie savings. Lastly, ask for the sauce to be served in a separate dish on the side so you can control the amount you eat.

5. Don’t Overeat, Ask for a Doggie Bag Early – Many restaurants are serving quantities that are larger than a single serving.  Put aside a portion of your entree at the beginning of the meal to take home with you.  You’ll be less tempted to overeat!

6.  Tell Yourself “No” To Sugary, Fatty Desserts – Enjoy a low fat or low carbohydrate dessert selection such as a low carb cheesecake. Fruit is always a really great option; make it special by placing a very small dollop of  whipped cream (low fat if available) or indulge in a small bowl of low fat yogurt ice cream.
